Brown Butter Banana Bread

Okay, hear me out. You come across SO many banana bread recipes on the internet, you also have your own. So, what makes this recipe any different? If you take one thing away from this, it is to brown your butter…

Why? Brown butter adds a subtle (but important) depth of flavour and nuttiness to your baking which is so worth the extra 5 minutes of prep.

Ingredients

  • 450g ripe bananas, roughly mashed

  • 100g salted butter, browned & cooled

  • 2 eggs

  • 100g raw cane sugar

  • 1 tsp vanilla extract

  • 180g plain flour

  • 1 tsp baking powder

  • 60g chopped walnuts

  • 75g chopped chocolate

Method:

  1. Brown your butter over a low heat until solids start to form and the melted butter starts to go golden brown. Remove from the heat and allow to cool.

  2. Whisk wet ingredients together before folding in the flour & baking powder.

  3. Add your walnuts & chocolate before baking in the oven at 170C (fan) for ~1 hour until cooked through.

  4. Cool. Slice. Enjoy.
