Smashed Peas & Scrambled Egg on Toast

The perfect breakfast to enjoy after a workout or on the final day of the long weekend. Packed with nutrients to set you up for the day.

Eggs -> complete protein source to support muscle recovery & keep you fuller for longer

Peas -> source of soluble fibre to support gut health & also additional protein

Ricotta & butter -> fat source essential for hormone balance

Sourdough bread -> easy carb source to replenish glycogen levels but easier on the stomach than regular bread due to lower gluten content

Ingredients: (Serves 2)

Smashed peas:

  • 70g defrosted peas

  • 1 tbsp ricotta (optional)

  • handful mint

  • squeeze of lemon

  • salt to taste

To serve:

  • scrambled eggs cooked in butter (use 4 eggs for two adults)

  • 2 slices sourdough bread

Method

  1. Add all ingredients for the peas into a food processor. Blitz until reaching a desired consistency.

  2. Serve over toasted sourdough and top with freshly cooked scrambled egg.
